Why make a sandwich with stuffing on it, when you can make a sandwich with it! Yes, I'm coming atcha with a Thanksgiving drop biscuits that has the best side dish of the holiday built right into it. And with only 6 ingredients, and less than 30 minutes, so you can just skip right over the turkey, and dive straight into pillow carb heaven with a basket of these.

I've never been one for rising and kneading, when I could be eating 🙂

What makes these stuffing biscuits delicious

  • Baking mix
  • Stuffing mix
  • Poultry seasoning
  • Chopped celery
  • Chopped onion
  • Dried cranberries (optional)
  • Chicken stock

How to make these stuffing biscuits

Start by preheating your oven to 450°F (232°C) and lining a baking sheet with parchment paper, or spraying with cooking spray.

In a large bowl, add 3 cups of baking mix (I like Heart-Healthy Bisquick), 1 cup of stuffing mix, ½ teaspoon poultry seasoning, ¼ cup chopped celery (about 1 large stalk), ¼ cup chopped onion (red or yellow onion work), and ¼ cup dried cranberries if using until mixed. Stir in 1 cup of chicken stock just until dough starts to form.

Drop on prepared baking sheet by the spoonful to form 12 biscuits. Bake in preheated oven for 8-12 minutes, or until golden brown.

Pro Tips:

  • Swap out the stuffing mix for a cornbread variety if that's your thing!
  • If you want to make vegetarian, swap out the chicken stock for vegetable stock.
  • Use dried currants, figs, or chopped fresh rosemary for that extra Thanksgiving feel.

FAQs

Can I make these stuffing biscuits gluten-free or vegan?

I've never tried making these with gluten-free baking mix and stuffing mix, so can't speak for that. For vegan and vegetarian options, just swap out the chicken stock for vegetable stock, and you're good to go.

How long do these drop biscuits last?

Since the celery and onion make these a little bit more moist, I'd only keep these for 2-3 days, unless freezing. Store in a freezer-safe bag in the freezer for up to 1 month.

  • 3 cups biscuit mix ( I used Bisquick Heart Smart)
  • ¼ cup celery, diced
  • ¼ cup onion, diced
  • 1 cup boxed stuffing mix
  • ½ teaspoon poultry seasoning
  • 1 cup chicken stock*
  • ¼ cup dried cranberries or figs (optional)

Instructions

  1. Preheat oven to 450°F (232°C)
  2. Coat baking sheet with cooking spray or parchment paper, and set aside.
  3. In a large bowl, combine biscuit mix, diced vegetables, poultry seasoning, and stuffing mix.
  4. Add in chicken stock, and stir just until dough forms. Add more chicken stock a tablespoon at a time if mixture is too dry.
  5. Stir in dried fruit if using.
  6. Drop biscuits on greased cookie sheet, and bake 8-10 minutes, or until golden brown.
