- Shrimp: Large (size 16-20 preferably), wild-caught, fresh or frozen (thaw in cold water)
- Vegetables: onion, bell peppers, fresh cilantro + garnish
- Spices: ancho chili powder, cumin, paprika, coriander, salt, and pepper.

- Lemon or lime

These oven-baked shrimp fajitas take just minutes to make and are so easy to prep: just peel shrimp, and chop veggies! Here is the simplified method, check more detailed instructions below:
- Place the shrimp and vegetables on a rimmed baking sheet.
- Sprinkle over the homemade fajita seasoning.
- Drizzle with olive oil and toss to combine everything.
- Bake in the oven at 400ºF (200ºC) until shrimp is cooked through and vegetable is tender, tossing once halfway through. Easy!

Directions
1.To make the sheet pan shrimp fajitas: Preheat your oven to 400°F (200°C). Lightly oil a rimmed sheet pan.
2.In a small bowl, combine chili powder, cumin, paprika, coriander, salt, and pepper, and set aside.
3.Arrange the bell peppers strips and onion onto the sheet pan. Top with shrimp, then sprinkle garlic and the seasoning mix evenly over shrimp and veggies.
4. Drizzle olive oil over top then toss everything to evenly coat. Spread on the baking sheet into an even layer.
5. Roast in the preheated oven, tossing once halfway through cooking until veggies are tender and shrimp have cooked through – about 8 – 10 minutes. You can crisp up the shrimp and vegetables by using the broiler for the last 2 minutes.
6. Wrap tortillas tightly in foil and warm in the hot oven during the last 5 minutes of cooking. A good idea is to add them on the side when you toss the shrimp and vegetables.
7. Drizzle lime or lemon juice evenly over the shrimp fajitas, sprinkle with fresh cilantro and red chili pepper flakes if you want. Serve the sheet pan shrimp fajitas on warm tortillas with your favorite toppings. Enjoy! ❤️

If you have leftover sheet pan shrimp fajitas – which we highly doubt – we recommend reheating the leftovers in a skillet on the stovetop. This will prevent the shrimp from becoming rubbery and the peppers from turning to mush, like in the microwave.

We have made this twice in the last month, as requested by my teens! I subbed 1 tsp of chipotle chili powder for one of the two tsp of chili powder and it spiced it up a bit. I also added zucchini to the veggies. It’s easy, quick, and delicious!
